BEEF TRI TIP
Slices of Tri Tip roast made famous up in Santa Maria. Coated with Pinkie’s dry rub then smoked long and slow over a hickory fire.
Hand sliced brisket smoked over hickory for 14 to 16 hours. You can cut it with a fork. Just plain old good!.
This is not the brined smoked salmon in the deli section. Ours is hickory smoked for hours forming a smoky crust with moist succulent meat inside. Probably won’t see this at the parking lot BBQ in Tennessee, but it will put a little love in your heart. “Trust me.” J.D.

Everybody seems to have his or her favorite on this one. Pinkie’s is light on the vinegar dressing to allow the flavor and texture of the cabbage to come through.
Our beans are finished in the smoker for 2 hours after cooking down for 4 hours in the oven. No canned beans or liquid smoke allowed in Pinkie’s kitchen. These are world class beans!
GRANDMA HEHE'S CORN
My Grandma in Arkansas could always make vegetables taste good. This is her recipe with a little Louisiana influence. Chopped red bell peppers and onions sautéed in pork fat, toss in a little Cajun magic seasoning.
